Maple Valley woman wins chocolate championship

Nancy Henkel's Chocolate Pizza Bites took home the blue ribbon in the Ghirardelli Chocolate Championship at the Washington State Fair.

Nancy Henkel’s Chocolate Pizza Bites took home the blue ribbon in the Ghirardelli Chocolate Championship at the Washington State Fair.

Henkel won a $150 cash prize and a chocolate gift basket. This was Henkel’s first time winning the blue ribbon in the chocolate competition at the fair.

Chocolate Pizza Bites

1 package Ghirardelli 60% Cacao Bittersweet Chocolate Chips

1 package peanut butter chips

2 cups mini marshmallows

1 cup rice crispy cereal

1 cup dry roasted peanuts

10 – 12 maraschino cherries, quartered

1/3 cup shredded coconut

Melt Ghirardelli chocolate chips and peanut butter chips together, setting aside a handful of peanut butter chips for later use. Melt until smooth. Stir in marshmallows, rice crispy cereal and peanuts. Spoon the mixture onto a greased 12-inch pizza pan. Top with cherries and coconut to simulate pepperoni and cheese pizza topping. Melt remaining peanut butter chips and drizzle over the top. Refrigerate until firm. Cut into bite-sized wedges.
